Celebrate Mom with this special Mother's Day brunch recipe. These Caramelized Banana Pancakes make for a memorable meal the whole family can indulge in.
1 cup gluten free oats, finely ground
1/3 cup cornmeal
1/3 cup buckwheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup maple syrup
1 cup low fat buttermilk
Butter for the pan
2 tablespoons butter
2 tablespoon heavy cream or milk
2 tablespoons sugar
For the pancake batter, simply combine all ingredients and mix well. Heat butter in a medium sauté pan over medium heat and ladle mixture in. Flip when you see the edges browning. Transfer immediately to a serving dish.
To caramelize the bananas, heat butter in a pan. Add sugar and cream and stir. Once bubbling, add banana slices. Cook until bananas turn golden.
Top pancakes with bananas and serve immediately.
